Red: Moulin d'Eole Costières de Nîmes 2001 (Languedoc-Roussillon)
The Languedoc-Roussillon region is the biggest vineyard of France with 40% of the wine production. In 1983, Costières de Nîmes received the A.O.C. (Appellation d'origine controlée). Moulin d'Eole is located 15 kilometers South of the city of Nîmes. It is a mixture of 80% Syrah and 20% Grenache. The selection of grapes is made from old vines at low yield. It goes through a process of 100% destemming, strict temperature control, and maceration for 21 days with frequent pumping.
Moulin d'Eole has a deep red color, a powerful nose with notes of red fruits, violets and spices. It is fat on the mouth with noble tannins. It has a long, lingering and elegant finish. It will pair well with beef, duck or an assortment of cheeses. Aging 5 to 7 years.

White: Vouvray 1999, Domaine du Clos de l’Epinay, Cuvee Marcus (Loire Valley)
Vouvray is a little village a few kilometers from the city of Tours, in the heart of the Loire valley. If you have traveled in this region, you will remember the white houses made of tuffaut (limestone) as well as the famous Castles of Chenonceau and Chambord, to name a few. The Vouvray is made from 100% Chenin Blanc. It grows on clay and limestone in a temperate climate.
This delicious wine has been described as luscious and fruity, which are the perfect words. It has a fragrant nose reminiscent of flowers and limetree. It is a great companion to goat cheese, fish in cream sauce, and definitely all the fruit tarts (plums, prunes, or apples). The Vouvray has an exceptional ability to age. Do not hesitate to keep it for several years.
