The Sallies Estate is located between the Minervois and the Corbieres, about 12 miles from the city of Carcassonne and 25 miles from the Mediterranean Sea. It lies on the site of an ancient wetland, amidst the hills and mountains of the Languedoc, cut off from the Sea during the uplift that raised the Pyrenees Mountains
This brackish lake, with its unpleasant and unhealthy climate, was drained under Louis XIV at the end of the 17th century, and the land was steadily reclaimed and planted during the French Second Empire. The Domaine Sallies has been in the Gau family for more than 100 years. A notable fact about the vineyard is that they are flooded at the end of each winter, an ancestral technique which allows the vines to be grown on their own rootstock and not attached to American rootstock as almost the totality of French vines. As such the vineyard was uniquely protected from phylloxera in the beginning of the 20th century. This gives a measure of authenticity to the vines.
Mechanical harvest is done at night to avoid oxidation of the juice. This Sauvignon Blanc has a light yellow color, with typical nose of tropical fruit and grapefruit. It is very pleasant on the palate with citrus and white fruit flavor. Serve it cold with smoked salmon, warm goat cheese salads and seafood.
