Red: Domaine Font-Mars 2007
Originally from the Netherlands, Jean de Clock settled in Bordeaux in 1679, whereupon he cultivated a vineyard. A later ancestor, Leon de Clock married Camille de Vulliod of Chateau Font Mars in the town of Meze. Since then, from 1864 until today, the property has been managed bythe ancestors of Camille. Jean-Baptiste de Clock, the youngest son, is now the owner, and carries on both family traditions.
The Domaine de Font-Mars is part of the Languedoc region, located near the Mediterranean Sea. The vines grow on soils of clay and chalk in which the fossils of Dinosaur eggs are found. The Chateau pays homage to the antiquity of its site in name: Font-Mars loosely translated means "soil of the dinosaurs"
The wine is 100% Cabernet Sauvignon and deep garnet red in color. The nose and palate display a sophisticated fruitiness that is restrained, yet at the same time ample in mouthfeel: indeed it seems to grow more full-bodied within an hour or two of being open. Scents and flavors of predominately red and some darker cherry, black olive, liquorice and touches of herb, perhaps mint, make this a wine that will partner with, rather than overwhelm food. It is versatile enough to pair with everything from soft to firm cheeses, roast poultry, portobello mushrooms, to all manner of beef and lamb preparations.
