The Mas de la Deveze comes from what was once an old rundown farm in the Côtes du Roussillon. Grown in soils of limestone and schist are ancient Grenache, Carignan, and some Syrah. The Sarabande Rosé is a cuvée made of equal parts of the above-mentioned varieties. They were fermented and aged in concrete vats for 5 months. The name Sarabande, according to an old definition, comes from an Oriental danse that was so lascivious that it raised fire inside even the most honest people.
The color is that of watermelon, with a slight peach hue. Upon opening, the nose and flavors, too, are that of fresh, juicy watermelon. Once opened, it develops new flavors of cherry and peachpits. The texture suggests bright honeydew melon and a clean, refreshing chalk-like minerality.
Sarabande is delightful on its own on the patio or by the pool. It is delicious with a salade Niēoise, yet due to its structure, it will also pair well with herb vegetables and chicken on the grill.
